It\u2019s nothing new. It\u2019s been like this for over 80 years, and it still sets our pace today.<\/span><\/p>\n<h3><b>The kitchen starts at the port<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">The <\/span><b>Port of Palma<\/b><span style=\"font-weight: 400;\"> is much more than the view from our terrace. It\u2019s where everything begins. Every morning, before the city has fully woken up, small fishing boats return to the <\/span><b>lonja<\/b><span style=\"font-weight: 400;\"> with the day\u2019s catch\u2014<\/span><b>fresh fish<\/b><span style=\"font-weight: 400;\"> and <\/span><b>seafood<\/b><span style=\"font-weight: 400;\">. And that\u2019s where we are, as always, paying close attention.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">We choose calmly, without forcing the menu. We don\u2019t rush, and we don\u2019t work with ingredients that travel halfway across the world. We cook with what the sea gives us <\/span><i><span style=\"font-weight: 400;\">that day<\/span><\/i><span style=\"font-weight: 400;\">. That\u2019s how we stay true to our traditional Mediterranean cuisine\u2014honest, flavourful, and always with a contemporary touch.<\/span><\/p>\n<h3><b>Where to eat fresh fish in Palma?<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">In a city like Palma, saying you serve fresh fish <\/span><i><span style=\"font-weight: 400;\">shouldn\u2019t<\/span><\/i><span style=\"font-weight: 400;\"> be remarkable. But it is. Because what makes the difference is proximity: to the <\/span><b>lonja<\/b><span style=\"font-weight: 400;\">, to the product, and to the truth.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">We\u2019re just a few metres from where that fish is landed. We watch it come in. We select it. They just need to be cooked well when the time is right.<\/span><\/p>\n<h3><b>A kitchen without pretence, but with history<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">Ca n\u2019Eduardo isn\u2019t a seasonal restaurant. We don\u2019t open just for sunshine and close when the pace slows down. We stay open all year\u2014because the port does, too. Because the <\/span><b>lonja<\/b><span style=\"font-weight: 400;\"> keeps going. And because the people who choose us come for more than just the view.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">And we like to think that shows\u2014in the calm rhythm of our service, in the wine we suggest, in the way we serve without interrupting. Because even though we\u2019ve evolved over time, some things haven\u2019t changed.
